Simple Veggie and Hummus Platters

Fresh, crisp veggies and cool, creamy hummus. A combo to rival bacon and eggs. Peanut butter and jelly. Fish and chips.
(well, in my world anyway)

And the key to it all?

Colour. Lots of colour. Because who doesn't want to eat something that looks like a rainbow? Open a bag of Skittles and prove me wrong.
(on second thought, don't open a bag of Skittles ... just imagine)

All I'm saying is that if you want to get your kids to eat this stuff, make it pretty. If you're trying to eat more veggies yourself, make them pretty. Texture and colour and variety are appealing to our eyes ... and we all know there's a link between seeing something yummy and feeling hungry ...

Make it impossible to refuse.

So, I'm not going to give you a recipe for hummus today ... but just suggest that at the markets this weekend or at the shops this week you look for a platter's worth of rainbow veggies. Try out the different coloured carrots, the different coloured tomatoes, the radicchio, the red/yellow/green peppers. Buy or make some hummus. And see how you go.

and here are some hummus recipes for you, just in case ... and yes, you can always substitute canned chickpeas for soaked-and-cooked ones
Basic hummus from Smitten Kitchen
Grown-up hummus from 101 Cookbooks
Sweet potato hummus from My New Roots

I think half of the pleasure from food - particularly fresh food - comes from the presentation. It really does make a difference. Don't you think?

  5. I must try those little purple carrots. I saw them this morning at the little market in caloundra and instantly thought of you but my bag was so full i resisted. You are so right about presentation.. for me its the thing that will make me stop and look for a while.

  7. Hummus and veggies is top of the list of those you've mentioned. I would never turn it down for anything else. This looks so delicious and pretty. All those colors could also lift the spirit.
