Super-Dooper Homemade Muesli Bars
A good muesli bar is a girl's best friend. Well, if that girl has a toddler. And a coffee-induced glucose imbalance. And a grumbly tummy.
But have you looked at the ingredients in your off-the-shelf muesli bars? (You should, you know. Look at ingredients lists on things. But that's another story.)
These little bars were inspired by the magnificent Mollie Katzen (again) - specifically, her 'breakfast bars' in Still Life with Menu. (I must be going through a Mollie Katzen phase ... ) I've added raw cacao and coconut oil for antioxidants and nut meal to boost the protein levels, as well as buckwheat flour for its natural, sweet nuttiness. Feel free to try this recipe with whatever you have on hand - with or without the cacao and with different dried fruits, flours, nuts, and/or juices.
Homemade Muesli Bars
makes 1 tray
10 min prep + 30 min baking + 20 min cooling
2 cups rolled oats
3/4 cup buckwheat flour
3/4 cup almond meal (or nut meal of your choice)
1 cup raisins (or dried fruit of your choice)
1/4 cup sesame seeds
1 Tbs raw cacao powder
1 Tbs cacao nibs (or chocolate chips)
4 Tbs rapadura sugar
1 tsp cinnamon
1/2 tsp sea salt
100 mL melted coconut oil
1 cup pear juice (or fruit juice of your choice)
*As always, try to use organic when you can!
1. Mix all the ingredients together and spread into a large, lined, rectangular pan.
2. Bake at 180C (360F) for ~30 minutes; cut into squares while hot, but leave them to cool in the pan before removing them.
3. Store in an airtight container at room temperature for up to a week, or in the fridge if you want to keep them longer.
A tray of organic muesli bars cost me less than $5 to make - which is a lot cheaper than the ones you buy at the supermarket. And with no added corn syrup. Yay!
