Super-Dooper Homemade Muesli Bars

 

A good muesli bar is a girl's best friend. Well, if that girl has a toddler. And a coffee-induced glucose imbalance. And a grumbly tummy.

But have you looked at the ingredients in your off-the-shelf muesli bars? (You should, you know. Look at ingredients lists on things. But that's another story.)
These little bars were inspired by the magnificent Mollie Katzen (again) - specifically, her 'breakfast bars' in Still Life with Menu. (I must be going through a Mollie Katzen phase ... ) I've added raw cacao and coconut oil for antioxidants and nut meal to boost the protein levels, as well as buckwheat flour for its natural, sweet nuttiness. Feel free to try this recipe with whatever you have on hand - with or without the cacao and with different dried fruits, flours, nuts, and/or juices.

Homemade Muesli Bars
makes 1 tray

The time
10 min prep + 30 min baking + 20 min cooling

The ingredients
2 cups rolled oats
3/4 cup buckwheat flour
3/4 cup almond meal (or nut meal of your choice)
1 cup raisins (or dried fruit of your choice)
1/4 cup sesame seeds
1 Tbs raw cacao powder
1 Tbs cacao nibs (or chocolate chips)
1 tsp cinnamon
1/2 tsp sea salt
100 mL melted coconut oil
1 cup pear juice (or fruit juice of your choice)

*As always, try to use organic when you can!

The process
1. Mix all the ingredients together and spread into a large, lined, rectangular pan.

2. Bake at 180C (360F) for ~30 minutes; cut into squares while hot, but leave them to cool in the pan before removing them.

3. Store in an airtight container at room temperature for up to a week, or in the fridge if you want to keep them longer.

The cost
A tray of organic muesli bars cost me less than $5 to make - which is a lot cheaper than the ones you buy at the supermarket. And with no added corn syrup. Yay!

I promise promise promise there will be some Phoenix stuff coming soon ... I've been busy settling in for our 5 weeks here. But I have recently pulled my camera back out, dusted it off, and have been baking some truly fabulous cookies that I'll be sharing with you all.

  4. The picture convinced me, but then I was really sold when you said $5 dollars. Really?? I feel like I will need to make some hefty investments in some the ingredients you mentioned above, but I guess a little goes a long way... and I would really love to include them in my cooking!

  5. @Jennifer @ Raisin Questions You are right on, Jennifer. A lot of these made-from-scratch goodies can be made really cheaply once you've got the ingredients for them! It may hurt to buy coconut oil (it's $12 or more in Australia) ... but once you have it, you'll use it for so many things :)
