Avocado, Miso and Tahini on Toast


If you've followed Easy Peasy Organic for awhile, you might recognise this recipe ... a glorious little combo of local avocados, miso paste, tahini and lemon juice, all mashed up and slathered on toasty sourdough. Perfect on sunshiney mornings, with a cup of hot green tea. Or packed up in a little jar to have with crackers at lunch.

I'm so making this tomorrow, when I can ditch the fruit cocktails and mashed potatoes and gray plastic trays here in hospital and head home to be pampered (- thanks in advance, Mom).

I'm not as sore as I thought I'd be, but 10 hrs later I'm still loopy from the anesthetic; I've got the TV on and the Biggest Loser's coming up (yay!) and a saline drip in my arm and I've just looked through my wedding photos again. And again. Robbie was here all day, watching me sleep/doze/attempt coherent speech, and now he's gone home to our darling girl and I feel like talking about what happened today.
So here you go.

Today I had my ovaries removed. It was a hard decision for us to make, but also an easy one. You see, the ovaries are what produce most of the estrogen that pumps through the female body ... and my breast cancer was of a type that loved estrogen. So in the long-term, this is the right thing to do, and it makes it much less likely my cancer will come back.

But it's still a little sad, because once upon a time Nelle was one of those eggs ... and even though we believe pregnancy post-cancer would be risky for me, we still mourn all those potential little babies I've just lost. Before cancer interfered, we'd planned 2 or 3 kiddies ... and now we'll only ever have one. (One. But what a one, she is!)

It's taken us nearly 4 years to come to terms with this, and make the decision to have this surgery, and now we've done it. So please excuse the language, but cancer can f**k off.

And me? I'm going to lay down for another nap.
And maybe look through some wedding photos.

Avocado, Miso and Tahini on Toast
Serves 2-3
   
The time
5-10 min

Ingredients
1 Tbs miso
1 Tbs tahini
A few Tbs water
1 large avocado
sea salt and lemon juice, to taste
Sourdough bread, toasted, to serve.


*Use organic when you can!

1. Mix the miso and the tahini in a saucepan over low heat (or microwave), adding enough water to get it to a peanut-butter paste-y quality. You can also make larger, more liquid quantities as a really amazing vegan gravy!

2. Mash up your avocado and add to the miso/tahini gravy. Slather onto toast and sprinkle with sea salt and lemon juice, to taste.

Pure brawn is what you are, it takes someone so strong to kick cancer's a**! Get as much pampering as you can, you certainly deserve it and thanks for all the hard work you put into your lovely recipes!

I'm so late in reading this and by now you are home with your HUSBAND!!! and your beautiful little Nelle. I hope you are recovery well from your surgery and can only imagine the wrestling you had to do to settle on this decision. You are a very inspirational woman, I knew that the first time I *met* you on line and read the magazine article. I commend you for your courage and your beautiful sense of humour through everything you have endured. May you continue to give cancer the boot and have it *F off* into oblivion. Congratulations on your marriage...live happily ever after Amanda :)
