Absolutely Amazing Brown Rice with Yummy Stuff in It
Brown rice is one of those battles at my house. I buy it almost exclusively - because it has higher nutritive value, more fibre, and I like the nuttiness of it. But Robbie? As soon as I start to make a curry for dinner he's asking 'can we please have basmati?'
Well, this is my compromise ... of sorts. I mean - it's not really a compromise ... because it's still brown rice (so, I win! Ha!) It's more of a jazzing up of brown rice. Jazzing up to the point that Robbie has seconds of it ... and thirds ...

Absolutely Amazing Brown Rice
with Yummy Stuff in It
serves 4 as a main or 6 as a side
The time
15 min if you're starting with cooked rice; 1 hr if not
The ingredients
3/4 c pumpkin seeds or pepitas
50 g butter
1 large onion, minced
1 tsp sea salt
3 c cooked brown rice*
1/2 c raisins
NOTE: Feel free to substitute away here!
Instead of rice? Try couscous or quinoa.
Instead of pumpkin seeds? Try a mix of chopped, dry roasted nuts and seeds - whichever you like best.
Instead of raisins? Try currants, or dried cranberries.
*If you haven't already got rice prepared, allow yourself time to make it! The standard ratio to get you enough brown rice here is 1.5 c brown rice: 3 c water.
**As always, try to use organic ingredients when you can.
The process
1. Dry roast* the seeds in a heavy-bottomed pan over medium heat, until they start to pop and brown. Remove from heat and pour into a small bowl. *dry roast just means without oil
2. Using the same pan, saute the onion in the butter - again over medium heat - until it's soft and golden.
3. Add the rest of the ingredients, including the rice and the seeds, to the onion and mix completely. Add more salt to taste.
4. Serve up with curries, tagines, or all on its own!
The cost
My organic rice + yummy stuff cost less than $1 per serve (as a main).
So I guess it goes to show that if you can't beat 'em?
Add butter.

ReplyDeleteI love brown rice! And I eat it as a substitute for boxed cereal with yogurt and bananas and honey and cinnamon and raisins whohoo! hehehe So good. I love it's nutty flavor ;)
